California Pizza Kitchen (CPK) is set to make its debut in Encinitas, following a successful hearing with the city’s planning staff. The popular restaurant chain will occupy a space previously home to Corner Bakery, bringing a new dining option to the community.
During the meeting, Bridal Engstrom, representing CPK, expressed gratitude for the planning staff's efforts in facilitating the hearing. The restaurant will operate under a type 47 license, which allows for a full line of alcohol to be served alongside food. This license mandates that food preparation occurs on-site, a menu is available during all operating hours, and that alcohol sales account for less than 50% of total gross receipts.
With over 200 locations nationwide, CPK aims to enhance the local dining scene, similar to its existing establishment in Pasadena. The introduction of CPK is expected to provide residents with more dining choices and contribute to the local economy. As the city moves forward with this development, community members can look forward to enjoying a new culinary experience in Encinitas.
