Diane Grodek, the executive chef behind this initiative, shared her enthusiasm for the food truck's return. "We're making the rounds this spring to all the high schools in the district," she explained, highlighting the truck's mission to serve delicious, custom-created burritos. The menu features two standout options: a meat burrito and a vegetarian alternative, both accompanied by refreshing sides like honeydew melon with lime zest and a zesty corn and bean salad.

The burrito offerings are not just any ordinary fare; they stem from a recipe contest held with middle school students, reminiscent of a "Chopped" cooking challenge. One winning recipe evolved into the Verde burrito, packed with fajita chicken, grilled peppers and onions, pepper jack cheese, and bacon, served with salsas and guacamole. Grodek noted that this innovative dish is particularly appealing during spring, a time when students often experience menu fatigue. "This offers something a little bit different and exciting," she remarked.

Students at schools like Crockett, which participate in the Community Eligibility Provision (CEP), can enjoy their meals for free, while others pay according to their status—just as they would in the cafeteria. Grodek emphasized that the food truck operates under the same guidelines, ensuring that all students have equal access to nutritious meals.

However, managing the food truck is no small feat. Grodek described it as a "beast," requiring significant effort to coordinate menus and logistics. Yet, the flexibility of the food truck allows for special touches that are not feasible in the cafeteria, such as the addition of lime zest, which adds a burst of flavor that students might not typically experience.
